If you're craving some festive holiday treats but are short on time to do extra baking, these cranberry orange sourdough pancakes will satisfy your Christmas cravings while providing a warm, hearty breakfast. These pancakes use four eggs for plenty of protein. These are delicious with maple syrup and walnuts. This recipe comfortably serves our family of two adults and two young kids.
How to Make Cranberry Orange Sourdough Pancakes
Ingredients
1 cup sourdough starter or discard
1 cup flour
1 orange, juiced & zested (if limited on time, the zest can be skipped, but it adds an extra pop of flavor.)
4 eggs
1/4 tsp ground clove
1/2 tsp baking soda
1 tsp vanilla extract
3/4 cup chopped cranberries
Directions
Mix the sourdough starter, eggs, and orange juice.
Mix in 3/4 cup of the flour. If batter is too runny, continue adding the final quarter cup until desired consistency is reached.
Add in the vanilla extract, ground clove, and baking soda. Mix until batter has grown slightly frothier and is well combined. Mix in orange zest.
Heat pan or skillet until it is hot enough for butter to sizzle. Melt butter in pan, then spoon in your pancake batter.
Right away, sprinkle chopped cranberries over the pancake.
Once you can see the edges starting to cook and crisp, flip the pancake.
Cook all the pancakes, and serve with maple syrup and walnuts.
